Doodee Noodle Basics

Glass noodles are made from mung bean starch and are usually used in Asian dishes. They’re clear and have a chewy texture. Rice noodles are made from, you guessed it, rice flour and water. Egg noodles are made with wheat flour and eggs, and they’re popular in Chinese and Italian dishes.
